It actually calls for alligator, but small Scottish towns are not know for stocking that!
I used chicken thighs instead, which are actually my favourite part of the chicken.
This was suprisingly tasty, the sweet potatoes and spices, and punchy salsa go so well together.
Niamh has demanded this go on the repeat list!
